Recipe: Swedish Pineapple Cake

This is also from a NG I read. I recall Julie C. was looking for a pineapple cake. (This might be too late???) ps: I have no idea why is it "Swedish"?? Anyway, here is the original post.

Similar recipes are called Pineapple Cake, Easy Pineapple Nut Cake, and
Mexican Wedding Cake. Note that the recipe calls for no shortening or
oil, and is mixed by hand.

Swedish Pineapple Cake

2 cups all-purpose flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup chopped nuts
2 eggs
1 (20-ounce) can crushed pineapple with juice
Cream Cheese Frosting (recipe follows)

Preheat oven to 350 degrees. Grease a
13-by-9-by-2-inch baking dish. In large mixing bowl, combine
flour, sugar, baking powder, soda, nuts, eggs and undrained
pineapple. Mix well; pour into prepared pan. Bake 35 minutes
or until a toothpick inserted in middle of cake comes out
clean. Cool, then frost. Makes 18 servings.

Cream Cheese Frosting

1 (8-ounce) package cream cheese, softened (can use nonfat)
1 teaspoon vanilla extract
1/2 cup (1 stick) butter, softened
2 cups powdered sugar

Place cream cheese, vanilla and butter in mixing bowl.
Gradually beat in sugar with mixer until creamy. Spread over
cooled cake.

Variation: For Mexican Wedding Cake, add 1 cup chopped
pecans to batter. To topping, stir in 1/2 cup each chopped
pecans and flaked coconut.
