Recipe: Sweet Potato Pecan Bread (bread machine)

SWEET POTATO PECAN BREAD

2 1/4 teaspoons active dry yeast
3 cups bread flour
4 tablespoons rolled oats
1/2 teaspoon ground cinnamon
2 pinches ground nutmeg
1 1/2 teaspoons salt
2 tablespoons salt
2 tablespoons dark brown sugar
3 tablespoons nonfat dry milk
3 tablespoons unsalted butter
3/4 cup plain mashed sweet potatoes*
3/4 cup water
3 tablespoons dark raisins
1/3 cup chopped pecans

All ingredients must be at room temperature, unless otherwise noted.

Add ingredients in the order specified in your bread machine owner's manual. Set bread machine on the basic/standard bread making setting. Add fruit and nuts at the appropriate moment for your model bread machine. Select medium or normal baking cycle. The programmable timer can be used, if desired.

HINT: If dough appears too dry after kneading for the first couple of minutes, add additional water, no more than 1 tablespoon at a time, just until dough appears elastic. Do not add too much water.

*To make mashed sweet potatoes, for 3-cup-pacacity recipe, bake two 6-ounce sweet potatoes in a 400 degree oven for approximately 1 hour or until tender. Remove from oven. Cut in half and remove potato from skin. Mash in a small bowl until smooth. Cool to room temperature before using.
