SWEET POTATO CAKE ROLL

Makes 12 servings
3 eggs
1 cup sugar
2/3 cup cooked, mashed sweet potatoes or yams
1 Tablespoon lemon juice
3/4 cup all purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
3/4 cup chopped pecans
Confectioner's sugar
Orange Filling (recipe follows)
Preheat oven to 375 degrees F. Line a 10x15-inch jelly roll pan with wax paper. Grease and flour paper.
In the large bowl of an electric mixer, beat eggs at high speed for 5 minutes. Then add sugar gradually.
Stir in cooked sweet potatoes or yams and lemon juice.
In a separate bowl, stir flour, baking powder, spices and salt together. Gently fold into sweet potato or yam mixture. Pour into prepared pan and sprinkle with nuts.
Bake for 15 minutes. Turn out onto dish towel sprinkled with confectioner's sugar. Roll together with towel and wax paper. Cool on wire rack. While cake cools, prepare Orange Filling
Unroll cake, carefully peel off paper and spread cake with filling. Roll cake up and wrap in new wax paper. Chill 2 to 4 hours
FOR THE ORANGE FILLING:
1 (8 ounce) package cream cheese, room temperature
4 Tablespoons butter or margarine, room temperature
1 cup confectioners' sugar
2 teaspoons concentrated orange juice
1/2 teaspoon grated orange peel or dried orange zest
Place cream cheese and butter in the large bowl of an electric mixer and whip until fluffy. Add sugar and orange juice concentrate. Beat until smooth.
SWEET POTATO AND BANANA BAKE

This kids love, my lot almost treat it as a dessert!
6 bananas
2 tbsp fresh lemon juice
2 lbs sweet potatoes, cooked
1 cup fresh orange juice
1 tsp salt
1/2 tsp ground nutmeg
1/2 ground black pepper
1/2 cup sugar
1/3 cup butter
Cut bananas into quarters, sprinkle with lemon juice.
Mash sweet potatoes. Add orange juice, salt, nutmeg, pepper and sugar. Put half of the sweet potato mixture in a greased baking dish. Cover with 1/2 the bananas and dot with 1/2 the butter. Repeat.
Bake in a preheated 325 degree F oven for 30 minutes.
SWEET POTATO BREAD

1/4 cup sugar
1/4 cup butter, softened
2 eggs
1/2 cup molasses
1 cup mashed cooked sweet potatoes
2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1/4 tsp. ground cloves
1 cup raisins
1/2 cup walnuts, chopped
Preheat oven at 350 degrees.
Beat sugar, butter and eggs together until light and fluffy. Add molasses and sweet potatoes.
Sift all dry ingredients together. Slowly add to sweet potato mixture and stir. Add raisins and nuts. Pour into a well-greased loaf pan.
Bake for 1 hour or until done.
SWEET POTATO AND APPLE CASSEROLE

Good with ham, pork, veal and poultry
Plan one sweet potato and apple per two people
Peel potatoes and apples; cut into cubes and place in a bowl. Add brown sugar, cinnamon and salt according to your taste. Transfer to buttered baking dish. Top with butter and add a little water.
Bake, covered in preheated oven (350 degrees F) for 30 minutes. Uncover and cook about 30 minutes more or until done.
APPLE CHEDDAR PIE WITH SWEET POTATO CRUST

Makes 8-10 servings
FOR THE CRUST:
1 cup mashed, cooked sweet potato
1 egg, lightly beaten
1/4 cup melted butter
2 Tbsp fresh orange juice
1 cup all-purpose flour
1/2 tsp salt
1 tsp baking powder
FOR THE FILLING:
1 apple (I use a Granny Smith) peeled, cored and grated
1/2 cup sweet wine (a dessert wine is best)
1 1/2 cup grated cheddar cheese
3 eggs
1 1/2 cups cream
Good pinch nutmeg
TO MAKE THE CRUST:
In a bowl combine all ingredients for the crust; mix well. Press dough into a large greased pie plate (I love these doughs you don't have to roll out!!!!!!)
TO PREPARE THE FILLING:
Marinade apples in wine for about 4 hours.
Drain apples well. Sprinkle apples and cheese over base of pie crust.
Beat eggs and cream together; add nutmeg. Pour into pie crust.
Bake in a preheated 350 degrees F oven for 45 minutes. Leave to stand in the plate for 15 minutes before cutting.
This is great cold also with a good salad and chutney, I've also taken it on picnics and the children have taken it in lunch boxes. Its also good weekend fare for when you're busy and everyone's in and out!
YAM BAKE A LA ORANGE

2 large yams or sweet potatoes (1 lb. each), boiled, peeled and sliced 1/4-inch thick
2 oranges, peeled and sliced
3/4 cup California dried figs, sliced crosswise into fourths
1/4 cup walnut pieces
1/4 cup butter or margarine, melted
2 tbsp honey
1 tsp grated orange peel
Arrange yam slices, oranges and figs in an 8-inch round baking pan. Sprinkle with walnuts.
Combine butter, honey and orange peel. Pour over all.
Cover with foil; bake in a 350 degree F oven for 30 minutes, until bubbly.
