Recipe: Sweet Potato Souffle Recipe (not Cafe Dixie)

SWEET POTATO SOUFFLE

1 (14 1/2 ounces) can mashed sweet potato
1 cup sugar
2 large eggs, lightly beaten
1/4 cup milk
2 tablespoons fresh orange juice
1 teaspoon grated orange rind
1 teaspoon vanilla extract
2/3 cup all-purpose flour, divided use
1/2 cup butter or margarine, melted, divided use
FOR THE TOPPING:
1 cup chopped pecans
1 cup firmly packed brown sugar

Preheat oven to 350 degrees F. Lightly grease a 13x9-inch baking dish.

Stir together sweet potatoes, sugar, eggs, milk, orange juice and rind, vanilla, 1/3 cup flour, and 1/4 cup butter; pour into prepared baking dish.

Combine chopped pecans, brown sugar, remaining 1/3 cup flour, and remaining 1/4 cup butter; sprinkle over potato mixture.

Bake at 350 degrees F (175 degrees C) for 40 minutes or until bubbly.
