Recently, I made this bread and divided the dough into two portions. One I used the same day, the other I put in the freezer, after punching it down after the first rise in the bread machine (on dough cycle). I just wrapped it in plastic wrap, and it came off fine (no sticking).
I shaped 1/2 of the dough into a round shape, and let it rise a bit (for about 30 minutes). Then I sprinkled it with Mrs. Dash garlic flavour, some parmesan cheese, and a sprinkle of coarse sea salt. (I had dimpled and spread a light layer of olive oil first, of course, as per the original instructions). I served this with some pasta we were having for dinner, having cut it up into triangles (like you would cut a pizza).
I used a lightly-oiled baking pan and cooked it in my counter top oven for about 20 minutes, at 400 F.
The other half of the dough, I froze. I removed it the day I wanted to use it, and at dinner time, I put in on the greased pan and made it into a square-ish shape (so as to easily cut into quarters (on the diagonal, making big triangles) for the burgers later), and left it to rise for a while. I was using it as the bread for satay burgers, so I just olive-oiled it and sprinkled it with Mrs. Dash and a bit of sea salt (no cheese...didn't think that would go with the burgers very well).
It was delicious and easy and fast...I toasted the split bread lightly and it worked wonderfully for the burgers!
I am going to make a habit of freezing half, as it was so easy and fresh and delicious. AND have ya seen the price of bread lately? (especially specialty breads!)
