Yield - 30 - 35 servings
Ingredients
4 LBS RIPE PLANTAINS
1 LB DARK BROWN SUGAR
1 LB BUTTER (Not margarine)
2 TBSP VANILLA EXTRACT
4 WHOLE VANILLA BEANS
1/4 CUP CAPTAIN MORGAN RUM
1 GALLON GOLDEN VANILLA ICE CREAM
Method
Use a fillet knife and skin the plantains then cut them in half lengthwise
and into 2 -1/2 inch
to 3 inch long pieces. Arrange the pieces in a large heavy skillet. (At
least 14 inches or
larger). Distribute the brown sugar, butter, vanilla extract and beans on
top of the
plantains. Turn the fire on low to medium and simmer the mixture for 20 to
25 minutes or
until the plantains are tender. Be careful to stir the plantains
occasionally, so as not to burn
the sugar. The water from the plantains and butter will evaporate and the
sugar sauce will
thicken naturally.
When ready to serve flame the rum in the banana sauce.
Alternate Method
If you do not have access to plantains then substitute bananas. However,
reduce the
cooking time to 10 minutes, bananas are naturally tender and do not require
a long time to
cook.
For a greater banana flavor add some banana liquor to your sauce.
Plate Presentation
Spoon a large ball of semi-firm ice cream into a room temperature bowl and
ladle over a
Chef s spoon on top of the ice cream.

Banana Layer Cake
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups sugar
2/3 cup solid vegetable shortening
2 eggs
1 cup mashed ripe bananas (about 3 bananas)
1 teaspoon vanilla
1/3 cup buttermilk
Whipped Cream Frosting:
2 cups heavy cream, whipped
(may add sugar to taste)
2 bananas, peeled and sliced
Stir together flour, baking powder, baking soda and salt in med. bowl.
Beat together sugar and shortening in large bowl until well combined.
Beat in eggs, mashed banana and vanilla. Beat in flour mixture. Then
beat in buttermilk. Pour batter into 2 9-inch floured round cake pans,
equally. Bake for 30-35 minutes at 350 degrees. Cool in pans 10 minutes
after removed from oven, then cool completely on wire racks. Frost one
round cake with whipped cream frosting, then layer with sliced bananas.
Place second cake on top, and frost entire cake. Garnish top with banana
slices. Good luck

4 scoops vanilla ice cream
Cut bananas in half lengthwise and then in quarters widthwise
Add sugar and butter to a hot suzette pan. Carmelize.
When melted, add bananas and coat with sugar.
Remove pan from flame, add rum and banana liqueur.
Return to flame and ignite.
While still ignited, sprinkle sugar cinnamon mixture over pan.
When flame subsides, place bananas into the chaffing dish.
Serve with ice cream

CHOCOLATE-COVERED BANANA POPS
3 ripe, large bananas
9 wooden popsicle sticks
2 cups (12-oz. pkg.) HERSHEY'S Semi-Sweet Chocolate Chips
2 tablespoons shortening (do not use butter, margarine or oil)
1-1/2 cups coarsely chopped unsalted, roasted peanuts
1. Peel bananas; cut each into thirds. Insert wooden stick into each banana
piece; place on
wax-paper-covered tray. Cover; freeze until firm.
2. In microwave-safe container, place chocolate chips and shortening.
Microwave at HIGH (100%)
1-1/2 to 2 minutes or until chocolate is melted and mixture is smooth when
stirred.
3. Remove bananas from freezer just before dipping. Dip each piece into warm
chocolate, covering
completely; allow excess to drip off. Immediately roll in peanuts. Cover;
return to freezer. Serve
frozen. 9 pops.
VARIATION: HERSHEY'S Milk Chocolate Chips or HERSHEY'S MINI CHIPS Semi-Sweet

Banana Rum Loaf
1 egg
1 cup sugar
1/2 cup butter
3 ripe bananas, mashed
1 teaspoon rum (or rum extract)
2 cups flour
1 teaspoon baking soda
1 cup chopped dates, rinsed in boiling water for 1 minute, drain well
1/2 cup chopped walnuts or pecans
Preheat oven to 350 degrees. In large bowl beat egg, sugar, butter, bananas
and rum
until smooth. Add flour and soda. Blend well, then add dates and nuts. Pour
into a
9-by-5-by-3-inch greased loaf pan. Bake 1 hour and 15 minutes or until it
tests done.
Note: Bread can be put into 2 73/8-by-35/8-by-21/4-inch pans and baked for

minutes.

BANANA-CAKE - A no-cooking cake with fruit and whipped cream
INGREDIENTS (Crust #1)
2 cups graham cracker crumbs
1/4 cup margarine
PROCEDURE (making crust #1)
(1) Mix and press in bottom of a 9x 13 pan. Bake 10
minutes at 350 deg. F. Cool.
INGREDIENTS (Crust #2)
2 cups all-purpose flour
1/2 cup sugar
1 cup soft margarine
1 egg, slightly beaten
1/2 tsp vanilla
PROCEDURE (making crust #2)
(1) Blend all ingredients thoroughly. Pat dough on
bottom of a pan.
(2) Bake at 400 deg. F for about 10 minutes or until
golden brown. Cool.
INGREDIENTS (Crust #3)
32 Oreo cookies
2/3 cup melted margarine
PROCEDURE (making crust #3)
(1) Crush cookies and mix them with the margarine.
Press mixture in bottom of pan.
INGREDIENTS (Filling for 1 cake)
1/2 cup margarine
2 1/2 cups
powdered sugar
2 eggs
4-5 bananas, sliced lengthwise
20 oz chunk pineapple, drained
4 cups whole strawberries
1 cup whipping cream
chopped nuts
PROCEDURE
(1) Whip margarine/sugar/egg mixture with electric
mixer and spread over cooled crust.
(2) Place bananas, cut side down, on top of above
layer.
(3) Spread on the pineapple chunks, then the strawber-
ries.
(4) Whip the cream, cover the whole dish with whipped
cream, and sprinkle with nuts.
(5) Refrigerate 4 hours before serving.
RATING
Difficulty: easy. Time: 20 minutes preparation, 4 hours

* Do not use instant oats.
** Use pecans, walnuts, or your choice of nuts, chopped.
Sift flour, soda, baking powder and salt together. Cream together sugar and
shortening. Beat in well beaten eggs. Stir in the vanilla, lemon juice, and
banana.
Add rolled oats and nuts to flour mixture, alternately with banana mixture,
mixing well after each addition. Stir in nuts.
Drop by teaspoonfuls onto greased baking sheet and bake in preheated
350-degree oven 15 to 18 minutes, or until golden.
Makes about 6 dozen cookies.

INGREDIENTS (1 loaf)
3 very ripe bananas
1 cup sugar
1/2 cup shortening (butter)
2 eggs
3 Tbsp yoghurt or sour cream
2 cups flour
1 tsp baking soda
1 cup chopped walnuts
rum, vanilla, or amaretto (optional)
PROCEDURE
(1) Preheat the oven to 350 deg. F. Cream the shor-
tening and sugar.
(2) Mix in the bananas.
(3) Mix in the remaining ingredients.
(4) Pour into a greased loaf pan.
(5) Bake 1 hour 15-20 minutes at 350 deg. F.
NOTES
If you use more than 3 normal-size bananas, I suggest that
you lower the oven temperature and cook for a while longer.
Otherwise, the crust comes out almost overcooked while the
middle remains moist and almost undercooked.
RATING
Difficulty: easy. Time: Preparation: 10 minutes; baking:
at least 95 minutes. Allow some time for cooling. Preci-
sion: Approximate measurement OK.

Banana Sweet Potato Puff Casserole
2 cups of mashed sweet potatoes
1 cup of mashed ripe bananas (3 medium)
3/4 teaspoon of curry powder
1/3 cup of sour cream
1/2 teaspoon of salt
1 egg
In a large bowl, combine all ingredients. Beat with electric mixer until
light and very fluffy. Turn
into 1 quart casserole dish. Bake at 350-degrees F. in the oven for 20
minutes or until puffed and
lightly browned.
YIELD: 4 to 6 servings.

8 firm, but ripe bananas, thinly sliced
2 tablespoons melted butter
6 tablespoons confectioners' sugar
Vanilla ice cream, frozen vanilla yogurt or whipped cream for serving
1. Put rack in center of oven; heat oven to 400-degrees. Grease 6, 12-ounc
capacity souffle or small baking dishes. (You may substitute large custard
cups.) Set on baking sheet.
2. Divide bananas between souffle dishes, overlapping them evenly and
attractively. Lightly brush tops with melted butter. (Can be prepared up to
2 hours ahead to this point and kept at room temperature.) Before cooking,
evenly press confectioners' sugar through fine wire mesh strainer to cover
surface, using about 1 tablespoon per serving.
3. Bake until bananas are very warm, about 8 minutes. Turn oven to broil
and move cookie sheet to within 8 inches of heat source. Broil until
surface lightly browns, about 2 minutes more.
4. Serve with a small scoop of ice cream or frozen yogurt or a dollop of
whipped cream. Serve immediately.

Banana blends with a box of cranberry quick-bread mix for this double treat.
"Serve it warm or cold,"
says Pat Kozlowski of La Grange, Illinois, the recipe's creator.
1 15.6-ounce package cranberry quick- bread mix
1 cup water
1 lightly beaten egg
3/4 cup regular rolled oats
2/3 cup mashed ripe
bananas (2 medium)
3/4 cup sifted powdered sugar
1 to 2 tablespoons orange juice
1. Lightly grease a 9x5x3-inch or an 8x4x2-inch loaf pan. Set the pan aside.
2. In a large mixing bowl, stir together cranberry bread mix, water, egg,
rolled oats and bananas till combined.
(Don't add oil, as stated on bread-mix package.) Pour the batter for the
bread into the prepared pan.
3. Bake in a 350 oven for 50 to 55 minutes for the 9x5-inch loaf or 60 to
65 minutes for the 8x4 inch loaf or till a
toothpick inserted in the center comes out clean.
4. Cool loaf in the pan on a wire rack for 10 minutes. Remove the bread from
the pan; cool thoroughly on wire
rack. Wrap and store the loaf overnight before slicing.
5. Combine powdered sugar with enough orange juice to make a thin icing;
drizzle over the bread. Cover and
store any leftovers in the refrigerator. Makes 1 loaf.

6 bananas
1/2 lemons -- juice only
1/2 cup honey
1 1/2 tablespoons dark rum
ground cinnamon -- optional
1. Butter a baking dish with 1 tablespoon of the butter; or use solid
margarine, not the soft diet type.
2. Peel bananas and leave whole or cut into 3-inch pieces. Place in a single
layer. Sprinkle with the juice of 1/2 lemon. Pour honey on top evenly and
dot with remaining 3 tablespoons butter.
3. Bake in preheated 350-degree oven for about 20 minutes. Turn bananas once
or twice as they are baking. Sprinkle with cinnamon or a few grains of
nutmeg if you prefer.
4. Just before serving, heat rum carefully and ignite. Pour over bananas and
serve immediately.

P. 296. 1980 edition. It is very good; the rum gives it a special, warm
flavor.
Mexican Banana Bake
1 3 oz. package cream cheese, softened
1/4 c. packed brown sugar
1/4 c. rum
3 tbsp. half and half
1/8 tsp. ground cinnamon
5 medium bananas
1 tbsp. butter or margerine
Place cream cheese, sugar, rum, half-and-half, and cinnamon in
blender container. Cover and blend on high speed until smooth,
30 seconds. Slice half the bananas into ungreased 1 quart
casserole. Dot with butter; spread with half the cheese
mixture. Slice the remaining bananas into casserole; spread
with remaining cheese mixture. Bake uncovered in 325 F oven
until hot and bubbly, 20 - 25 minutes.

Cookies

1 stick Crisco-bar or 2 sticks butter (16 tablespoons total)
1 teaspoon baking soda
1.5 cups white sugar (may substitute brown sugar)
a couple glops of honey (or more if you reduce the sugar a little)
2 eggs
a gurgle of vanilla (2 tablespoons if you're picky)
1 banana (easier to smush if it's ripe enough that the peel is browning)
1/2 cup nuts (I like walnuts) or 1/2 to 3/4 cup shredded coconut
2.5 or so cups of flour
Melt Crisco in a large bowl. Smush a banana into it. Add in everything else
but the flour. Add nuts for a banana-nut cookie.
Or add coconut for the banana-coconut version (very exciting!).
Mix. Add flour. mix some more.
Add extra flour until the mixture is reasonably firm (doesn't stick very
much to your fingers).
If you added much honey, it helps to chill the dough briefly -- otherwise
the cookies melt and make big flat cookies (though they still taste good).
Drop little clumps of dough onto baking sheet.
Bake 9-10 minutes at 375 degrees F. Don't overcook -- Tom's cookies should
come out slightly undercooked for that delicious chewy texture.

Banana Cream Cheese Pie
Crust:
1 1/2 vanilla wafer crumbs
1/4 c. sugar
6 Tab. melted butter or margarine
Mix ingrediets together and press into a 9-inch pie pan. Bake 10 minutes at
350F degrees. Set aside to cool.
Filling:
16 oz. cream cheese, softened
1 c. sugar
3 eggs
1/2 c. mashed bananas
1 sliced banana
Beat the softened cream cheese with an electric mixer until light and
fluffy.
Gradually add the sugar, mixing well after each addition. Add the eggs, one
at a time, beating after each. Stir in the mashed bananas. Pour filling
into the cooled pie shell and place sliced bananas on top. Bake for 50
minutes
in a preheated 350F degree oven. Cool on a wire rack and refrigerate until
ready to serve.

2 Tablespoons Confectioner's sugar
1. In a medium saucepan, combine granulated sugar, cornstarch
and salt; mix well. Gradually stir in milk, mixing until smooth.
Over medium heat, bring to boiling, stirring constantly; boil 1
minute, stirring. Remove from heat.
2. In small bowl, lightly beat egg yolks. Stir half of hot mixture
into yolks, mixing well; pour yolk mixture into saucepan. Bring
back to boiling, stirring. Cook 30 seconds longer. Into medium
bowl, pour hot filling; stir in butter and vanilla. Cover surface
with plastic wrap or waxed paper; refrigerate until cold.
3. To assemble: Pour half of filling into pie shell. Slice bananas
into 1/4-inch-rounds. Arrange banana slices evenly over filling.
Cover with remaining filling.
4. In medium bowl with a portable electric mixer at medium speed,
beat cream and confectioner's sugar until soft peaks form. Spoon
whipped cream onto pie, swirling attractively to cover surface.
Chill well.
