I just made this and it's quite good. It's inspired by Ben & Jerry's Chunky
Monkey, one of my favorite flavors, but the recipe is my own adaptation
after
looking at banana ice cream recipes in several cookbooks. Let me know what
you think, sp that I can possibly refine it further.

Banana-Nut-Chip Ice Cream
4 overripe bananas
1 T lemon juice
1 t vanilla extract
1 c sugar
2/3 c milk, chilled
1 1/3 c heavy cream, chilled
1/2 c walnuts, coarsely chopped
1/2 c chocolate chips
Peel the bananas and cut into chunks. Puree in blender with the lemon juice.
Add vanilla and sugar and blend until smooth. Add milk and blend again,
briefly. Add cream, blend thoroughly.
Churn in ice-cream machine according to manufacturer's instructions. A few
minutes before finished, add nuts and chocolate chips; continue churning.
Makes 1 generous quart.

Banana Split Pie
! Grahan Cracker Pie Crust
1 pkg. fat free, sugar free instant vanilla pudding
2 bananas
1 15-oz can crushed pineapple, well drained, and squeeze out as much
of the juice as you can.
1 small carton fat free Cool Whip
Mix instant pudding, and as it starts to thicken, pour it into the pie
shell. Slice two very ripe bananas over it. Sprinkle the squeezed
pineapple over this. Cover with Cool Whip, and refrigerate until the pie
is chilled and well set-up. It tasted so good to me. Of course it has
the natural sweetner of the bananas, and the pineapple in it's own
juice.

2 bananas
oil/margarine to fry bananas
2 sliced onions
3-4 garlic cloves
1 tart apple, chopped
1 1/2 tsp grated lemon peel
1 tsp ground ginger
11/2 tsp ground coriander
1/8 tsp turmeric
1/4 - 1/2 tsp red pepper
1/4 - 1/2 tsp cumin
1 can black eyed peas (drained and
rinsed)
1 can kidney beans (undrained)
1/2 c water, white grape, or peach juice
(or equivilant in dried form)
1/4 cup chopped peanuts
3 c. cooked rice
Cut bananas lengthwise and then in half. Fry over high heat until lightly
brown on each side. Set aside.
Saute onion, garlic and apple together. Stir in spices and lemon peel. Add
kidney beans, black eyed peas, and liquid. Simmer for about 15 minutes.
Top with peanuts. Serve with rice and bananas. Green beans with peanut sauce
accompanies this dish nicely.

4 bananas
4 tablespoons fresh lemon juice
powdered sugar
1 tablespoon cornstarch
1/2 cup light cream
2 large eggs -- separated
2 tablespoons rum
1. Wash bananas and dry well. Remove a very thin section of peel off side of
banana. You are trying to keep peel as intact as possible so cut carefully.
Remove the banana from peel.
2. Place 1 peel in each of 4 individual baking dishes. Sprinkle with lemon
juice. Set aside.
3. In a sauce pan combine 1 tablespoon powdered sugar, 1 tablespoon
cornstarch and light cream. Cook, whisking constantly, until mixture becomes
very thick.
4. In a blender or food processor, puree two of the bananas, or enough to
make 1 cup of puree. You won't need the other two bananas for this recipe.
They can be mashed and 1 teaspoon of lemon juice added; seal tightly and
freeze for later baking use.
5. In a saucepan, combine cream mixture, banana puree, egg yolks and rum;
mix well. Cook, whisking constantly, until mixture thickens. Remove from
heat, transfer to a bowl, and chill slightly.
6. In a mixing bowl, beat egg whites until stiff peaks form. Add a small
amount of the whites to banana mixture; mix well. Gently fold remaining
whites into the mixture.
7. Spoon mixture into banana peels, piling slightly. Sprinkle with a little
sifted powdered sugar.
8. Bake 15 minutes in a preheated 350-degree oven until top is lightly
browned. Sprinkle with powdered sugar and serve immediately. Also good with
a very light sprinkling of freshly ground nutmeg or cinnamon.

2 1/2 cup flour
2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup unsalted butter -- cut into pieces & ch
1 cup banana -- pureed
4 1/2 cup heavy cream -- divided
2 1/2 cup dark brown sugar -- tightly packed
2 tablespoon granulated sugar
2 1/2 tablespoon dark rum
2 1/2 tablespoon banana liqueur
5 bananas -- peeled and sliced
Preheat oven to 400 F.
Sift together into a mixing bowl the flour, baking soda and salt.
Cut in the cold butter until mixture resembles coarse meal. Lightly
stir in banana puree to make a damp dough. Turn out onto floured
surface and roll or pat to 1 inch thick. Cut into 2 1/2-inch circles
with floured cutter. Place on an ungreased cookie sheet and bake until
golden, about 30 minutes.
Combine 2 1/2 cups cream and the brown sugar in a heavy saucepan.
Cook over moderate heat, stirring constantly, until slightly
thickened, about 10 to 12 minutes. Do not scorch. Allow to cool about
10 minutes.
Meanwhile, whip the rest of the cream and the granulated sugar
together until soft peaks form.
To assemble, stir rum and banana liqueur into the warm sauce. Split
the biscuits and place on individual plates. Top with banana slices;
drizzle with sauce. Top with whipped cream. Makes 10 servings.
Per serving: Calories 922 Fat 55 g Cholesterol 190 mg Sodium
387 mg Percent calories from fat 52% :-(

Make the custard with the chocolate milk and the custard powder - no sugar
is necessary. Allow to become cold. When it is, pour over the sliced

2 large egg white
3 tablespoons oil
1 tablespoon Butter Buds
1/2 cup skim milk
1/4 cup nonfat yogurt -- plain
1/4 cup honey
4 tablespoons granulated sugar
1 small banana -- overripe and mashed
vegetable cooking spray
Preheat oven to 375F. Spray a 9x13 inch pan with vegetable cooking spray.
Mix
the apples, sugar, and cinnamon together in a bowl. Set aside. Sift the
flour, baking powder, and baking soda together in a large bowl. In another
bowl, beat the egg whites until light and frothy. Beat in the vegetable oil,
Butter Buds, nonfat milk, yogurt, honey, sugar and mashed banana. Mix the
liquid ingredients into the dry ingredients. Smooth the batter into the
sprayed pan. Place the
apple slices on top of the dough and press them into the dough. (You can
make
decorative rows or just dump the apples on top.) Drizzle any apple juice
left
in the bowl over the apples and dough. Bake at 375F for 10 minutes and 350F
for 30 -35 minutes moreor until cooked through. Serve warm or cool.
Refrigerate if not eaten in a day.

NOTES : This is a quick and delicious way to use up your apple harvest. The
banana keeps the cake moist and gives it a delicous taste.
Use 6-8 apples in the cake.

1 yellow cake mix (no pudding mix)
4 eggs
1/2 cup vegetable oil
1/2 cup water
1/2 tsp. nutmeg
1/2 tsp. banana extract
1 tsp. rum extract
1 cup mashed bananas
1 cup chopped walnuts
Mix first 7 ingredients until blended. Stir in mashed bananas. Fold in
nuts. Bake at 350 degrees for 45 minutes.
Icing
1 cup confectionary sugar
2 Tbs. milk
Gradually mix until glazed forms. Add more milk as needed. Drizzle over
cooled cake.

Cream butter in a large mixing bowl at medium speed of an electric
mixer. Add eggs, one at a time, beating well after each addition. Add
banana; beat well.
Combine flour, baking powder, soda and salt in a medium bowl. Add
flour mixture to cream mixture alternately with yogurt, beginning and
ending with flour mixture. Mix after each addition. Stir in pecans
and vanilla.
Pour batter into 2 greased and floured 9" round cake pans. Sprinkle
1/2 c coconut evenly over batter in each cake pan. Bake at 350
degrees for 30 to 35 minutes. Let cake layers cool in pans for 10
minutes. Carefully remove cake layers from pans and let cool
completely on wire racks.
Place one cake layer, coconut side down, on a serving plate. Brush
with Banana Flavored Syrup on top. Spread top cake layer with Creamy
Nut Filling. Top remaining layer coconut side up. Spread White Snow
Frosting on sides and 1" around top edge of cake, leaving center
unfrosted.
Banana Flavored Syrup:
Combine water and sugar in a saucepan, bring to a boil and let simmer
until sugar dissolves. Cool and add creme de banana.
Creamy Nut Filling:
Combine sugar, flour, salt, half-and-half and butter in a small
saucepan. Cook over medium heat, stirring constantly, until mixture
is thick and creamy.
Remove saucepan from heat, and stir in chopped pecans and vanilla.
Cool completely.
White Snow Frosting:
Combine shortening, butter, egg white and extracts in a medium mixing
bowl. Beat at medium speed of an electric mixer until blended.
Gradually add sifted sugar to cream mixture, beating at medium speed
until frosting reaches spreading consistency.

I have a cookbook entitled *Kwanzaa: An African-American Celebration of
Culture and Cooking* by Eric V. Copage. ISBN 0-688-12835-1...which I highly
recommend to all. The recipes that I
have tried have been excellent, although I have not tried the kelewele. I
will include the author's notes since I imagine most of us are not
familiar with this food.
KELEWELE: Spicy Fried Plantain
Cook's notes: Use yellow-ripe, not-too-firm plantains for these
marvelously seasoned nibbles. They could easily become a favorite
cocktail-time hors d'oeuvre, especially when served with a Caribbean rum
drink like Mavis's Pineapple-Papaya Punch. (I'll post it next.)
Makes about 60
4 large yellow-ripe plantains, peeled
2 tablespoons grated fresh ginger
1 tablespoon ground cloves
1/2 teaspoon cayenne pepper, or more to taste
1/4 teaspoon grated nutmeg
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons warm water
vegetable oil for frying.
1. Cut plantains into diagonal slices about 1/2 inch thick. In a medium
bowl, combine the ginger, cloves, cayenne, nutmeg, cinnamon, and salt.
Stir in the water to form a paste. Add the plantain slices and toss to
coat well. Let stand 30 minutes.
2. Preheat oven to 200 degrees.
3. Pour enough vegetable oil into a large skillet to reach 1/2 inch up the
sides. Heat the oil over medium-high heat until hot but not smoking.
(An electric skillet set at 350 degrees works well.) In batches, fry the
plantain slices, turning once, until golden brown, about 5 minutes.
Using a slotted spoon, transfer the fried plantains to a paper
towel-lined baking sheet, and keep warm in the oven while frying the
remaining plantains. Serve warm.

CLASSIC BANANA CREAM PIE
1 9-inch baked pastry shell
3 T. cornstarch
1-2/3 c. water
1 14oz. can sweetened condensed milk
3 egg yolks beaten
2 T. butter
1 t. vanilla
3 bananas
Lemon Juice
Whipped Topping
In heavy saucepan, dissolve cornstarch in water. Stir in milk and
yolks. Cook and stir until thick and bubbly. Remove from heat; add butter
and vanilla. Cool slightly. slice 2 bananas, dip into lemon and drain.
Arrange on bottom of pastry shell. Pour filling over bananas; cover.
Chill 4 hours until set. Spread top with whipped cream. Slice remaining
banana, dip in lemon, drain, and garnish on top of pie. Refrigerate
leftovers.

INGREDIENTS
4 bananas
1/2 grated onion
1 green pepper, chopped fine
3 tablespoons finely chopped parsley
4 slices bacon, chopped fine
1-1/4 cups of bread crumbs
Pinch of thyme
1 egg
1 teaspoon of salt
1.Pare and rub bananas through a sieve into bowl.
2.Add other ingredients and mix thoroughly. Fill the chicken and roast in
the usual manner.
Yield: Stuffing for one chicken
For roast goose, duck, etc., use 6 to eight bananas cut up in pieces 3/4
inch thick. Salt and pepper and add 1/2 breakfast cup
white bread crumbs. Mix well.

BANANA SPLIT CHEESECAKE

1-1/2 pkgs GRAHAM CRACKERS, crushed
1/2 cup GRANULATED SUGAR
6 TBS BUTTER
1 10-inch SPRINGFORM PAN

Mix and pat into springform pan, bottom and sides; set
aside.

FILLING

2 lbs CREAM CHEESE, removed from wrappers
and warmed in microwave (on HIGH)
for about 2 minutes. I zap it for
1 minute, feel it, then keep
doing it until the cream cheese
is warm. You can also leave it to
warm up at room temperature.
1 cup GRANULATED SUGAR
1/2 cup HEAVY CREAM
1 cup SOUR CREAM
5 JUMBO EGGS, removed from shell and holes
poked in the yokes, warmed in
microwave for 25 seconds.
3 tsp LEMON JUICE (fresh NOT bottled!)
1/4 cup CORNSTARCH
1-1/2 cups BANANA (VERY ripe), mashed

Preheat oven to 325-degrees (NO higher!).
Place a pan of hot water onto the bottom rack of the oven.
Beat the cream cheese until light and fluffy on HIGH speed.
Add sugar and beat again. On LOW speed beat in eggs, one at
a time, beating well after each addition. Stir in cream,
sour cream, lemon juice and corn starch. Stir in the banana.
Pour mixture into prepared pan.
Bake for 1 hour, or until the edges of the cheesecake are
firm and the middle is a bit soft (jiggle the pan, the
cheesecake center should barley move).
Remove cake from the oven and run a butter knife around the
edge. Set the cake in a draft free place for about 10
minutes, then LOOSEN (DO NOT remove) the sides of the pan.
Cool completely.

2 TBS GRANULATED SUGAR
1 TBS CORNSTARCH
1 (16 oz) can PINEAPPLE (in heavy syrup), crushed
MILK CHOCOLATE (or your fav),
melted
STRAWBERRIES, mashed (as much as

WHIPPED CREAM (whipped w/sugar)
MARASCHINO CHERRIES

Mix sugar and cornstarch well in a saucepan. Add pineapple
and cook over medium heat until sauce boils and thickens
slightly. Cool completely.
To assemble the cake, pour the pineapple topping over the
top. Drizzle on melted chocolate (as much or little as you
like). Add strawberries (use your imagination when
decorating the top). Pipe on whipped cream, or place a
dollop onto each serving. Garnish with maraschino cherries.

Title: Banana-Stuffed French Toast

Yield: 2 servings
4 1-inch-thick slices
- French bread
1/4 c Mashed ripe banana
3 tb Soft cream cheese
2 Eggs
1/3 c Milk
1/4 ts Vanilla
1/2 c Peanuts or pecans, chop
2 tb Sugar
1/4 ts Ground cinnamon
Maple-flavored syrup
Sifted powdered sugar
Grease a baking sheet; set aside. Cut a pocket horizontally in each
slice of French bread, cutting from the top crust almost to the
bottom crust. In a small mixing bowl stir together the banana and
cream cheese. Spoon 1 rounded tablespoon of the banana-cream cheese
mixture into each pocket. In a shallow bowl beat together the eggs,
milk, and vanilla. In a pie plate stir together the peanuts or
pecans, sugar, and cinnamon. Dip the stuffed bread slices into the
egg mixture, then coat with the nut mixture. Place the stuffed bread
slices on the prepared baking sheet. Bake in a 450~F oven about 6
minutes or till golden. Turn the slices over and bake about 5 minutes
more or till golden. If desired, serve with maple-flavored syrup or
sprinkle with powdered sugar.

Banana Raisin Bread Pudding
1/2 small loaf raisin bread
1 1/2 tablespoons butter or margarine
4 bananas, sliced
2 eggs
2 1/2 cups milk
1/2 cup currant jelly
Grease a 2 quart baking dish. Spread the slices of raisin bread with butter.
in the prepared pan alternate layers of raisin bread and sliced bananas,
ending with bread. In a bowl beat the eggs. In a separate bowl combine the
jelly and milk, stirring until well blended. Combine the eggs and milk
mixture and pour over the bread and bananas. Bake in a 350 oven for 1 hour
or until a knife inserted in the center comes out clean. Cut into squares.
Variation:
Instead of jelly, 1/4 cup of sugar and the juice of 1 lemon may be used.
Sprinkle the lemon juice over the bananas, and add the sugar to the milk.
Proceed as above.
Serves 6 to 8

4 medium bananas, peeled and split in 1/2 lengthwise
1/4 cup brown sugar
1/2 cup orange juice
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 cup sherry
1 Tbs. butter
1/4 cup rum
1.Arrange bananas in buttered baking dish
2.Combine brown sugar with orange juice, spices and sherry. Heat and pour
over bananas. Dot with butter.
3.Bake at 450 degrees 10 to 15 minutes, basting a few times.
4.Remove from oven, add rum and set ablaze!

6 firm bananas
1/4 cup orange juice
1/2 cup light brown sugar
1 cup grated coconut
1/2 cup slivered blanched almonds
1 tsp. ground cardamom
1/4 cup melted butter
rum or Cognac (optional)
1.Peel bananas and arrange in buttered baking dish. Pour orange juice over
them and sprinkle with sugar, coconut, almonds and cardamom. Pour butter
over them.
2. Bake at 400 degrees 25 minutes. Seve as a dessert, with a little rum or
Cognac poured over them, if desired.

Margaret, MA (10:54:06 pm) : Yogurt with Bananas and Coconut (India)
2 Tbs. butter
1 Tsp. black mustard seeds
1/2 cup unsweetened coconut
1 cup plain yogurt
1 tsp. salt
1 medium-sized banana, peeled and cut
into 1/4" thick rounds
1 tsp. finely chopped cilantro
1.In a small skillet heat butter and add mustard seeds. When they begin to
pop, add the coconut. Stir for a few seconds, remove from heat and add 2
Tbs. yogurt.
2.Mix together with all remaining ingredients and toss lightly. Refigerate
for at least 1 hour before serving.

Seppo, NY (11:15:52 pm) : NON-DAIRY BANANA MUFFINS
2 Large Ripe Bananas mashed
1/4c Canola, Sunflower or Corn Oil
1/4c Maple Syrup
Mix together well.
1/2 tsp Ground Cardamon (optional)
1/2 - 1 tsp Cinnamon
2 dates mashed or
1/8c raisins mashed
1 1/4c Flour - Whole Wheat, White or Barley
1 1/2 tsp Baking Powder
1/2 tsp Salt
Mix the rest of the ingredients into the banana mixture. Spoon into
well-oiled muffin tin and bake at 350 for 25 minutes. Fill muffin cups 2/3
full. Yields 6 large to 12 regular muffins. We keep meaning to see if these
muffins keep well, but we never have a chance, they get eaten too fast.
Variations: Taste buds love Walnuts and/or Chocolate Chips added to Banana
Bread or Banana Muffins.

Candy,VA (11:20:16 pm) : Banana-Pineapple Salad
2 pkg lemon jello
1 lg can crushed pineapple (drained)
2 bananas (sliced)
Topping:
1/2 c sugar
1 T flour
1 c pineapple juice(add water to make one cup)
2 well beaten eggs
pinch salt
1 envelope knox gelatin
1/4 c cold water
...................................................
1 c grated sharp cheese
1 c or more cool whip
...................................................
1. Prepare jello per directions
2. Chill till partially thick, cut each sliced of pineapple in 8 pieces &
fold into jello mixture with the bananas.
3. Pour into 13 x 9 pan and chill till firm
4. Mix sugar, flour & juice in pan, stir in beaten eggs, salt and cook over
low heat till thickened (stir constantly)
5. Soften knox gelatin with cold water and dissolve in hot mixture, add
cheese.
5. Chill the gelatin mixture until partially thickened, fold in cool whip
and pile lightly on jello mix. Refrigerate for several hours

Sift together:
2 1/2 C flour
1 2/3 C sugar
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
Add:
2/3 C Crisco
1/3 C buttermilk
1 1/4 C mashed bananas (3approx)
Beat (2) minutes.
Add:
3 eggs
1/3 C buttermilk
Beat (2) more minutes.
Fold in:
2/3 C ground pecans
Spray 9 x 13 pan with Pam.
Bake 350 45-50 minutes.
Cool. Top with Butter Frosting (see below).
Butter Frosting
1/2 C butter(room temperature)
3 1/2-3 3/4 C powder sugar
1 egg
1 tsp vanilla
1/2 tsp salt (optional)
1 Tbsp milk or cream
Cream butter. Add (1) cup powder sugar. Cream thoroughly. Add salt, milk, &
vanilla. Blend. Add egg & (1) cup powder sugar. Blend. Add remaining powder
sugar. Beat until smooth & fluffy.
