Recipe(tried): Tangy Dijon Coleslaw

Menus

1 tablespoon margarine
2 tablespoons all-purpose flour
2 tablespoons sugar
1/4 teaspoon ground black pepper
2 tablespoons dijon mustard (I like the grey poupon country dijon the best)
1-1/2 cups chicken broth
1/3 cup white wine vinegar
8 cups shredded red or green cabbage
1/2 cup chopped red onion

In a medium saucepan over medium heat, melt margarine. Blend in flour; add sugar, pepper, mustard and chicken broth. Cook until mixture thickens and boils. Stir in vinegar. Cover, refrigerate 1 hour.

In a large bowl, mix together cabbage and onion. Pour dressing over salad, tossing to coat well. Refrigerate at least 1 hour to blend flavors.
