Dinner---Mom's mountain morning Fish Fry.

When I was a boy I grew up in upstate NY. Many of our summers we spent in the Adirondack mountains at a small cottage my family owned on 7th Lake... (somewhere near Blue Mountain lake) I had fond memories of stopping by a small farm stand that would sit near the twisting country roads lined with all types of trees and berry bushes...to buy fresh hot donuts...that were sprinkled with either cinnamon/sugar or simple powder sugar.

Mornings, we would go out in the small row boat with my father... and see what fish would be "biting". Well... when we would bring in the fish... we would prepare them for my mom so that she could make us breakfast.

My mom would start off by frying about a pound of bacon (our family loved bacon!). Once the bacon was almost cooked well... she would drain the bacon...and set it aside trying to keep it warm. Next she would take the boneless fillets of fish... (that we caught... and then prepared...) dip them into an egg wash... then into seasoned flour... then back into the egg wash...and finally into a bowl of Ritz cracker crumbs... until they were completly covered...

She would heat up the bacon drippings and then fry the fish fillets. After she would flip the fish onto the other side...she would add the bacon that she had set aside...until the bacon was completly warmed and the fish was done.

Tonight I'm going to be preparing Cod fillets and bacon the way my mom used to make us breakfast up in the mountains. and on the side I will be serving my spicy coleslaw instead of tartar sauce.

I guess it sounds like an awful breakfast to most of you... but boy do I remember how good it tasted.... and the smell of a wood fire... and constant under the table kick fights me and my brother had... (smile)

The weather is really starting to change here in NYC... I'm gona be heading upstate in a few weeks to see the dramatic leaves changing color...see my beautiful nieces... and to take them out to the Cider Mill...to buy some candy apples and fresh cider of course to also see cider being fresh pressed... and then on to the pumpkin farm to make our choices for the soon to become jack-o-lanterns.

I guess with all of the cool weather comfort food is stirring inside of my head...
