TASTY CAKE
2 cups sifted all-purpose flour (sift flour before measuring)
1 1/3 cups sugar
1 teaspoon double-acting baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons instant coffee
1/2 cup shortening
1 cup milk
1 teaspoon maple flavoring
2 eggs, unbeaten
1/3 cup walnuts, chopped
Preheat oven to 350 degrees F.
Sift together flour, sugar, baking powder, baking soda, salt and coffee (this will be the second sifting of flour).
Add the shortening, milk and maple flavoring. Mix with electric mixer until blended, then beat on low for 1 1/2 minutes. Add eggs and beat an additional 1 1/2 minutes. Stir in nuts. Spread batter into a well-greased and lightly floured (bottom only) 9-by-13-inch pan.
Bake for 30 to 35 minutes or until toothpick comes out clean.
Cool, then frost with Banana Nut Frosting.
BANANA NUT FROSTING
1/4 cup mashed banana
1 teaspoon lemon juice
1/4 cup butter
2 1/2 cups confectioners' sugar
1/3 cup walnuts, chopped
Cream mashed banana, lemon juice and butter. Gradually add confectioners' sugar. Blend thoroughly. Stir in walnuts.
