Here is a tater tot casserole I recommend. I don't think it serves 60, but it would be easy to increase.
TATER TOT CASSEROLE
1 lb. ground beef (I also make it w/o this sometimes)
1 large onion, chopped
1 family size can condensed cream of mushroom (or something else) soup
1 (16 oz.) container sour cream
1 bag tater tots
3 cups any kind shredded cheese (I like cheddar or a blend)
Preheat oven to 350 degrees F. Grease a 13x9-inch pan.
In a skillet I brown the beef and saute the onions, then set aside.
In a bowl, combine soup and sour cream, set aside.
In prepared pan spread out the tots, the onion mixture, then sprinkle the cheese over, then spread the sour cream mixture atop.
Bake at 350 for 30 minutes, then stir well, breaking up tater tots with the spoon. Bake an additional 30 minutes.
I have never met someone who does not like this casserole. Hope you aren't the first. And bless your heart for cooking for 60 kids.
