BEEF NOODLE CASSEROLE
1 (8 ounce) package medium egg noodles
FOR THE MEAT MIXTURE:
1 pound ground beef
1/4 cup chopped green bell pepper
1 teaspoon salt
Dash freshly ground black pepper
1/2 teaspoon ground thyme
1/4 teaspoon garlic powder
2 tablespoons all-purpose flour
1 (15 ounce) can tomato sauce
2 tablespoons tomato paste
FOR THE CHEESE MIXTURE:
1 (8 ounce) package cream cheese, softened
1 cup (8 ounces) cottage cheese
1/4 cup sour cream
1/2 cup thinly sliced green onions, including tops
FOR THE TOPPING:
3/4 cup buttered fine dry bread crumbs
2 tablespoons grated Parmesan cheese
Cook noodles according to package directions; drain.
In skillet, cook beef until lightly browned, stirring occasionally. Drain off excess fat.
Add green pepper and seasonings to skillet; cook 5 minutes. Remove from heat. Stir in flour, tomato sauce and paste; set aside.
Mix together cream cheese, cottage cheese and sour cream. Stir in green onions. Set aside.
In a buttered 2 quart baking dish, spoon in half of noodles. Cover with half of cheese mixture and half of meat mixture. Spoon in remaining layers of noodles, cheese mixture and meat mixture.
Combine crumbs and Parmesan cheese; sprinkle over top.
Bake at 350 degrees F for 1 hour or until bubbly.
