Recipe: Pot-Roasted Beef Loaf Dinner (skillet meal)

POT-ROASTED BEEF LOAF DINNER

FOR THE MEAT LOAF:
1/2 cup chopped onion
1/2 cup water
2 eggs, slightly beaten
1/4 cup fine dry bread crumbs
2 tablespoons snipped parsley
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
2 pounds ground beef
2 tablespoons butter or margarine
FOR THE VEGETABLES:
12 small carrots
8 small new potatoes
1 pound fresh green beans (3 1/2 cups)
1/4 cup tomato juice

Combine the first 7 ingredients; add beef and mix well. Shape into 2 loaves; brown in butter or margarine in skillet.

Cover and cook over low heat for 15 minutes, adding 1 tablespoon water, if necessary. Drain.

Add vegetables and tomato juice. Cover; cook 45 minutes.

Makes 8 servings
