Recipe: Texas Fudge (3) (chile and cheese appetizer squares)

1 pound cheese, grated*
1 small can diced green chiles, drained
6 eggs, well beaten
Preheat oven to 350 degrees F. Grease a 9-inch square (or equivalent size) glass baking dish or spray with cooking spray.
Combine ingredients a spread in prepared baking dish.
Bake at 350 for about 1 hour. The center should be puffed and a knife stuck into the center should come out clean.
*I like to combine pepper jack and marble jack

TEXAS FUDGE
1 1/2 lbs. yellow cheddar cheese, shredded
1 lb. Monterey jack cheese, shredded
1 lb. Monterey jack cheese with jalapenos, shredded
1 can jalapeno peppers, diced, drained
3 eggs, beaten
Preheat oven to 350 degrees F. Grease a 13x9-inch baking dish.
Pat half the cheese into prepared dish.
Add the peppers then put the rest of the cheese on top and pat down.
Pour the eggs over the top.
Bake at 350 degrees F for 40 minutes.

1 (8 oz.) pkg Mozzarella cheese, shredded
1 (8 oz.) pkg Cheddar cheese, shredded
1 (8 oz.) pkg Pizza Mate cheese, shredded
4 oz. green chiles, finely chopped
5 eggs
1 (8 oz.) jar picante sauce (medium)
Preheat oven to 300 degrees F. Grease a 13x9-inch baking dish.
Mix together cheeses and chopped chiles; spread in prepared dish.
Beat eggs add picante sauce together. Pour over cheese mixture.
Bake at 300 degrees for 40-50 minutes or until lightly browned. Cool and cut into 1 inch squares.
