KEY LIME PERCH
4 medium perch fillets
1 cup Key lime juice
4 cloves garlic, crushed
1 stick (1/2 cup) butter or margarine
Lemon pepper (to taste)
1 egg, beaten
1 /2 cups fine Italian bread crumbs
Marinate fillets in lime juice in covered glass bowl in refrigerator for 1 hour.
WHEN READY TO COOK:
Saute garlic in butter in skillet until brown; remove and discard garlic.
Drain fillets; sprinkle with lemon pepper. Dip in egg; coat with crumbs.
Cook in garlic butter in skillet until golden brown and fish flakes easily.
