Recipe(tried): Texas Sheet Cake .............a little different

Texas Sheet Cake
2 c. flour 1/2 c. buttermilk
2 c. sugar 1 tsp. cinnamon
1/2 lb. oleo 1/2 tsp. vanilla
4 Tbsp. cocoa 2 eggs, beaten well
1 c. water 1 tsp. soda
Sift flour and sugar. In small pan combine oleo, cocoa and water. Bring to a rapid boil, then pour over flour and sugar. Immediately mix well. Then add buttermilk, cinnamon, vanilla, eggs and soda. Mix well. Pour into 11 x 16 sheet pan. Bake at 350 for 20 minutes. Frost while still warm. Use same pan for cooking frosting as used for cooking batter mixture.

Frosting for Sheet Cake
1/4 lb. oleo 1 lb. powdered sugar
4 Tbsp. cocoa 1 tsp. vanilla
5 Tbsp. leftover coffee
Combine cocoa, oleo and coffee. Bring to a rapid boil-remove from heat-add vanilla and pwd. sugar. Beat well and put on warm cake.

The buttermilk in the batter instead of the sour cream lowers the calories quite a bit and the cinnamon in it is wonderful. The coffee in the frosting is also great, but some children don't like it. My children did like it growing up, but my now 8 year old granddaughter does not. I have made this, on request, for my grown children's birthdays for many years. They do love it as their father and I do.
