Recipe: Sesame Chicken Strips, Crisp and Crunchy Salad, Chocolate Peanut Butter Bars

SESAME CHICKEN STRIPS

3 tbsp butter or margarine, melted
1 tbsp soy sauce
1 cup crushed sesame snack crackers (about 30 crackers)
1 tsp ground ginger
1/4 tsp salt
1 lb boneless skinless chicken breasts, cut into 1 inch strips

In a bowl, combine the butter and soy sauce. In another bowl, combine the cracker crumbs, ginger and salt. Dip chicken strips in butter mixture, then roll in crums until coated on all sides. Place in a single layer on a greased baking sheet. Bake at 450 for 10 minutes or until juices run clear.


CRISP AND CRUNCHY SALAD

1 medium golden delicious apple, chopped
1 cup light corn syrup
2 celery ribs, thinly sliced
1/2 cup chopped walnuts
1/2 cup golden raisins
1/4 cup honey

In a bowl, combine the first five ingredients. Add honey, mix well. Serve immediately.


CHOCOLATE PEANUT BUTTER BARS

1 cup sugar
1 cup light corn syrup
1 cup peanut butter
6 cups crisp rice cereal
2 cups (12oz) semisweet chocolate chips, melted

In a large saucepan, combiine the sugar, corn syrup and peanut butter. Cook over medium low heat until the sugar is dissolved. Remove from the heat; add cereal and stir until coated. Spread into a greased 13x9x2 inch pan, press lightly. Spread melted chocolate over bars. Chill.
