Recipe: Carrot Pudding Cake with Orange Cream Cheese Frosting, Quick and Easy Carrot Cake (using cake mix)

Here are two carrot cake recipes (using cake mixes) that were previously posted here on Recipe Link. They both look yummy to me.

Carrot Pudding Cake
1 package (2 layer size) yellow cake mix
1 package (4 serving size) vanilla instant pudding & pie filling
4 eggs
1/4 cup water
1/4 cup oil
1 1/2 cups grated carrots
1/2 cup chopped golden raisins
2 teaspoons ground cinnamon
Combine all ingredients in large mixer bowl. Blend then beat at medium speed of electric mixer for 2 minutes. Pour into greased and floured 10 inch fluted tube pan.
Bake at 350 degrees for 55 minutes or til cake springs back when lightly pressed. Cool in pan about 15 minutes. Remove from pan and finish cooling on rack.
Frost with Orange Cream Cheese Frosting if desired.
Orange Cream Cheese Frosting
Makes 1 1/2 cups
Cream together until smooth and well blended:
1 tablespoon butter or margarine, room temperature
1 package (3 ounce) cream cheese, softened
Gradually add:
2 1/2 cups sifted confectioners sugar
alternately with:
1 tablespoon (about) orange juice
Beating after each addition until smooth. Add:
1 teaspoon grated orange rind

Quick and Easy Carrot Cake
1 box carrot cake mix
2 eggs
1/4 cup vegetable oil
1 can apple pie filling, chopped up
Mix all ingredients together in bowl, mix until well blended, can do this by hand. Spoon into greased 9 x 13 cake pan
Bake at 350 degrees for approx. 25 minutes or until pulling away from sides of pan.
Frost with your favorite cream cheese frosting
This cake is very moist!
