Recipe(tried): Thanksgiving Leftovers - Turkey Pot Pie, Turkey Mushroom Quiche, Turkey Cranberry Salad

Hello Everyone,

I hope Thanksgiving was as wonderful for you as it was for us. This year's turkey and extra breast yielded 42 meals! I had 10 for dinner, weekend guests who repeated the dinner, sandwiches, Turkey Mushroom Quiche, Turkey Pot Pie, and Turkey Cranberry Salad. I have a baggy in the freezer with the precious remnants of what was left in the pan for a soup.

Turkey Pot Pie

3 c. white and dark mixed turkey meat
2 c. turkey gravy (canned is great)
leftover veggies like peas, corn, carrots
leftover stuffing
2 pie crusts for a 9" pie

Oven at 350. Mix all the meat, veaggies and gravy together. Put one pie crust in the pie pan or a rectangular baking dish. Pour filling in and layer with leftover stuffing. Fit other pie crust over, crimp if it is a 9" pie plate or tuck in if it is a rectangular dish. Poke with fork to vent steam, brush with a little milk and bake for 45 minutes.

Turkey Mushroom Quiche

1 9"pie shell crust
3 eggs
1/2 c. sliced mushrooms
1 T. dijon mustard
1/2 c. grated gruyere cheese
1/4 c. parmesan cheese
2 T. butter
1 clove garlic minced
1 c. cooked shredded turkey breast
1 t. dried Italian seasoning
1/4 c. white wine

Heat oven to 400. Bake pie crust in pan for 10 minutes. DO NOT PRICK BOTTOM OR SIDES. Melt the butter in a skillet and saute mushrooms, onions and garlic. Cook til tender and stir in turkey, seasoning and wine. Cook til all liquid evaporates. Spread the mixture on bottom of pie shell, sprinkle with 2 T. of both cheeses. In a bowl beat the eggs, cream and mustard together. Pour over the cheeses. Sprinkle with remaining cheeses. Bake for 25 minutes. Let stand 5 minutes before cutting.

Turkey Cranberry Salad

This salad sells for 8.00 a pound at a local gourmet shop in town! I came home and figured out what was in it. It is simple but fabulous!!

about 2-3 c. shredded turkey breast meat
sour cream
Miracle Whip
salt to taste
pepper to taste
1/2 t. curry powder
1 t. grated onion
1/2 c. chopped celery
1/2 c. dried cranberries
1/2 c. chopped pecans

Mix the turkey meat with equal amounts of sour cream and Miracle Whip til you get it to the consistency you want it to be. I like it on the dry side. You can make scoop balls with it to serve with crackers.

Then add all the other ingredients, mix well.
