Recipe(tried): the best way i know how to smoke fish

my favorites are king fish, dolphin, and wahoo. use a large bowl w/lid(should be able to hold about a gallon of water). place 2 bay leaves and several black peppercorns in bottom of bowl and place first layer of fish in bowl. repeat this step for as much fish as you have. fill bowl with water and add 6-8T of kosher salt depending on amount of fish. cover and refrigerate for 48 hrs. turning bowl upside down every 24 hrs. after 48 hrs. drain and rinse fish and fill bowl with water add fish and refrigerate another 24 hrs. (after this is done your fish has absorbed enough water so it doesn't shrivel up to nothing during smoking.) smoke 10-12 hrs. or until dry over low to med.-low with you favorite wood. enjoy!
