Menus

Thanks Theresa, they were terrific.
Bread Bowls
3 C. all-purpose unbleached flour
1 C. semolina flour( you could probably use whole wheat too)
2 1/4 tsp. instant yeast
2 tsp. sugar( or 1 Tbsp.non-diastatic malt)
1 1/2 tsp. salt
1 1/2 C. water
Combine all ingredients and mix together to make a soft dough ( by hand or
machine)
Cover and let rise for 1 to 1 1/2 hours
Divide into 5 pieces and form them into round (not flat) balls. Place them on a
lightly greased sheet or parchment lined baking sheet. Cover lightly and let
rise in warm place for 1 1/2 hours. Uncover the balls and let them sit for 15
minutes to toughen up the skin. Mist them heavily with water and bake in PRE-
HEATED 425 degree oven, for 18-22 minutes, or until they're a deep golden
brown. Turn off the oven, prop open the door and leave the bread bowls inside
for 15 minutes, to keep the crust crisp.
Remove and let cool completely. Slice off the tops and dig out the middle(save
for bread crumbs). Viola' bread bowls...it's worth the time.
