Soft Sugar Cookies
2 3/4 to 3 c. flour
1 1/2 c. packed brown sugar
1 c. buttermilk
1/2 c. shortening
1 tsp. salt
1 tsp. vanilla (I usually use 2)
1/2 tsp. baking soda
2 eggs
Cream shortening and sugar and add eggs and beat well. Add combined dry ingredients alternately with buttermilk. Amount of flour necessary may vary according to the consistency of the buttermilk. Cover and refrigerate dough. Drop by tablespoonsful onto lightly greased cookie sheet. Sprinkle with sugar and bake about 10 minutes at 375 degrees.
I usually roll the dough into balls and roll the entire ball in a bowl of sugar.
