Recipe: Tilapia with Sesame-Scallion Sauce

TILAPIA WITH SESAME-SCALLION SAUCE

1/4 cup finely sliced scallions (green onions)
1 medium clove garlic, peeled and minced
1 teaspoon finely grated gingerroot
2 tablespoons light soy sauce
3 tablespoons water
1/4 teaspoon hot chili oil
2 teaspoons sesame oil
2 teaspoons sesame seeds
1/2 teaspoon sugar
1 tablespoon lemon juice
1 1/3 pounds tilapia fillets (or substitute black or Pacific cod)

Preheat oven to 450 degrees F.

Combine scallions, garlic, ginger, soy sauce, water, chili oil, sesame oil, sesame seeds, sugar and lemon juice; set aside.

Put the fish in a baking pan and spoon a little of the sauce over the fillets.

Bake in a preheated 450 degree F oven for 12 minutes per inch of thickness, or until done.

Spoon the remaining sauce over the fish and serve.
