Recipe: Tips: Baking Meatballs In Muffin Cups

I'm glad you enjoyed the recipe! I prefer baking meatballs to browning them in a skillet too. Here's a tip that I've tried that works well - place each meatball in a muffin pan cup and bake. Make the meatballs large enough to set on the rim of each cup so they keep their round shape. The mixture needs to hold it's shape well so more bread crumbs or other filler may be added. You can use mini muffin cups for small meatballs. Silicone or nonstick muffin pans are be easiest to clean. If using or uncoated metal pans, line with foil or grease well.

This method also makes good mini-meatloaves by filling each muffin cup with your favorite meatball (or meatloaf) mixture. These are handy to freeze for quick meatloaf dinners. When reheating the mini meatloaves (the microwave works well for this) top with a little ketchup or barbecue sauce for a quick topping.
