Serves 4

Pre heat oven 220oC(425f)

3 large eggs
1 cup and 3 Tbls milk
3 Tblschopped parsley, chives and sage
3/4 cup all-purpose flour
1 lb chippolata sausages
4 ozs frozen peas (optional)

Gravy
********
1 Tblssunflower oil
2 onions, sliced
2 cups stock
1 Tbls soy sauce
3 Tbls horseradish sauce or Dijon mustard
2 Tbls cornflour(corn starch)Or lessBeat the eggs, milk and herbs in the blender or
processor. Season, to taste. Switch to low speed and
spoon in the flour. Blend for 30 seconds on high. Leave
to stand for 30 minutes.
Grill or bake the chipolatta until golden. Lightly oil a
baking tin and heat in the preheated oven until it is
smoking. Add the sausages and peas (optional). Pour
in the batter and bake for approximately 30 minutes
until the batter has risen and browned.
Gravy: Heat the oil and fry onions for 15 minutes until
brown. Add the stock, soy, horseradish or mustard and
bring to the boil. Mix the cornflour with a little water
and add to the gravy. Bring to the boil, stirring.

This I,ll serve with some steamed butternut "fingers".
