TORTELLINI SALAD
1 (9 oz) cheese filled tortellini
1 (15 oz) can black beans, rinsed and drained
1 (11 oz) can Mexicorn, drained
1/2 cup Old El Paso Salsa
1/4 cup Russian salad dressing
1/4 cup fresh chopped cilantro (optional)
Cook the tortellini as directed on the package. Rinse in cold water to cool; drain.
In a large bowl, combine the beans and corn, then add the tortelinni. Add the salsa and the Russian dressing, then toss to coat. Sprinkle with the cilantro, if desired.
