TOSTADA SALAD
1/2 cup Basic Ground Beef Mixture (recipe follows)
1 tablespoon salsa
1 (6-inch) flour tortilla
1/2 teaspoon margarine or butter, softened
1 tablespoon refried beans or bean dip
1/3 cup shredded cheddar cheese
torn lettuce
1/2 small tomato, sliced
1/2 avocado, seeded, peeled, and sliced crosswise
pitted ripe olives, sliced (optional)
In a small saucepan, heat meat mixture and salsa.
Spread both sides or tortilla with margarine or butter. Place on an ungreased baking sheet and broil 3-inches from the heat for2-3 minutes or till golden, turning once. Remove tortilla from broiler.
Spread with refried beans or bean dip. Reserve 1 tablespoon cheese for topping; sprinkle remaining cheese over tortilla.
Return tortilla to broiler and broil for 30 seconds to 1 minute more or till cheese melts. Cut tortilla into quarters.
FOR SALAD:
Arrange a layer of lettuce on a plate. Top with meat mixture and surround with tortilla quarters, tomato and avocado. Sprinkle with reserved cheese and olives, if desired.
BASIC GROUND BEEF MIXTURE
Makes three 1/2 cup portions
1 pound lean ground beef
1 small onion, chopped
1 clove garlic minced
1 teaspoon Worcestershire sauce
1/8 teaspoon salt
dash of pepper
In a large skittle, cook meat, onion and garlic till meat is brown and onion is tender; drain. Stir in Worcestershire sauce, salt and pepper till well combined. Use 1 portion of the meat mixture right away and or freeze portions for later use.
Makes 1 serving
