Recipe(tried): Traveling pies

Rahel - My aunt who was an excellent pie maker, and baker of all nice things, used to make her pies, bake them, cool them off and then wrap them airtight and put them in the freezer.

I know that lots of people make the pie and freeze it unbaked, but my aunt said that when you then bake it, the bottom crust is gummy and she was right on that - I've tried it.

She would take the frozen pie direct from the freezer and put it into the oven when she would first turn the oven on so the pie would warm up gradually with the oven - temp. at 350 degrees for about 20-30 minutes would make that pie taste like it was freshly baked.

SO, my suggestion is to bake it Tuesday morning, put it in the freezer overnight, then take it on your trip frozen as much as possible and return to freezer when you get to your destination - then on Thursday, do the above instructions to rewarm it for serving.
