ISO: baking pie and traveling question

A month and a half ago I froze apples with sugar and spices for a future pie. Now I want to use this for a pie for Thanksgiving. I am driving Wednesday morning and the trip is usually 3-4 hours but will probably be longer on that day so the question is: is it better to make the pie Tuesday to eat Thursday, or to bring the apple mixture and make the pie when I arrive? My concern is that the mixture will be completely defrosted and in the past I've only baked the mixture frozen.
