Recipe: Try Chili Sauce

Mary, I saw your note,about looking for tomato relish, and I believe I know what you are talking about. My mom makes what she calls "Chili Sauce", even though it is not hot at all. It's sweet with a tang, and you eat it cold with meat (we ate it with hamburgers). She won't give me the recipe, so you might try looking for it under this name instead of "relish". I did find one in the Ball Blue Book (Edition 32, with 4 squares on front) page 34, "Spicy Chili Sauce" which looks good! Have not made it, but here it is!

Spicy Chili Sauce

4 Quarts red ripe tomatoes, peeled, cored, chopped
(about 24 large)
2 cups chopped onions
(about 2 medium)
1 1/2 cups chopped sweet green peppers
(about 1 1/2 medium)
1 1/2 cups sugar
1 Tablespoon celery seed
1 Tablespoon salt
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon ginger
1 1/2 cups vinegar

Combine all ingredients in a large sauce pot. Bring to boil; simmer until as thick as desired, about 1 to 2 hours. Stir frequently to prevent sticking. Pour hot into hot pint jars, leaving 1/4 in. headspace. Adjust caps. Process 15 min. in boiling water bath. Yield: about 8 pints.
