Recipe: Corny Corn Bread

CORNY CORN BREAD

1/2 cup vegetable oil (plus more for greasing pan)
1 cup self-rising cornmeal
3/4 cup self-rising flour
1 cup cream-style corn
2 eggs, beaten
1 cup sour cream
1 cup grated sharp Cheddar cheese (optional)
1/4 to 1/2 teaspoon ground cayenne pepper (optional)

Heat oven to 375 degrees F. Generously grease a well-seasoned cast-iron skillet. Place it in the oven to heat while you mix the batter.

Mix all ingredients in a large bowl, stirring with a wooden spoon or rubber spatula until combined.

Pour batter into skillet and bake until golden brown, about 30 minutes.

Makes 8 servings
