TUNA-TOFU PATTIES
1/2 cup dried mushrooms
water
12 ounces firm tofu
12 ounces canned tuna
1/2 cup cooked navy or lima beans
4 eggs
1 small carrot, grated
1 stalk green onion, finely chopped
1 or 2 jalapeno peppers, seeded and finely chopped
2 Tablespoons sugar
2 1/2 Tablespoons soy sauce
3/4 teaspoon salt
1/8 teaspoon black pepper
TO SERVE:
steamed rice
Soak mushrooms in water. When soft, drain and chop very fine.
Squeeze excess water from tofu, then crumble it in a medium bowl. Add remaining ingredients and mix thoroughly.
Heat greased frying pan to medium-high. Drop large spoonfuls of mixture in pan. Press each into a patty and fry until golden brown on both sides.
Serve with steamed rice.
