TUNA TOP TOMATO
4 large tomatoes, cut horizontally into halves
1/2 cup Bisquick biscuit mix
1/2 cup shredded Swiss cheese
1/4 cup mayonnaise
2 large eggs
2 green onions (with tops), sliced thinly
1 (10 oz) pkg frozen chopped broccoli, thawed and drained well
1 (6 1/2 oz) can tuna, drained
Preheat oven to 400 degrees F. Spray a 9x9-inch pan with non stick vegetable oil.
Place the tomatoes cut side up in the prepared pan.
Mix remaining ingredients. Spread that mixture evenly on the cut side of each tomato half.
Bake uncovered until topping is puffed and golden brown. About 20 minutes.
