SHAKEY'S MOJO POTATOES
"Here's another one of my California recipes, I just had sitting around I thought I'd share. It's a recipe for MoJo Potatoes (or French Fries) from a popular west coast Pizza Franchise called Shakey's Pizza. Give it a try."
2 eggs, beaten
2 tablespoons milk
1 tablespoon butter, slightly melted
4 cups flour
2 teaspoons dried thyme
1/2 teaspoon ground cayenne pepper
canola cooking oil
fresh potatoes
All Season salt
Mix together eggs, milk, and butter in a bowl. Place flour, thyme, and cayenne in second bowl.
Cut each potato into 6 (1/4-inch thick) rounds.
Place oil 3 inches deep in frying pan
Place potato rounds in egg mixture covering completely, then roll potatoes in flour mixture. Place potatoes on cookie sheet while others are battered.
Once all potatoes are battered drop in frying pan. Make sure oil covers the potatoes completely. If needed add more oil. Once golden brown, and cooked, drain from oil and add All Season salt. Serve.

2 cups all-purpose flour
1/2 teaspoon ground cayenne pepper
2 teaspoons dried thyme
Salt and pepper
About 1/2 cup milk
Vegetable oil (for frying)
Bake potatoes at 425 degrees F for about 1 hour and 15 minutes. Let cool.
Cut each potato into 6 (1/4-inch) rounds.
Stir together the flour, cayenne, thyme, salt and pepper to taste.
Heat oil to 375 degrees F.
Dip each potato slice into the milk and then dredge thoroughly in the seasoned flour mixture.
Deep fry wedges without overcrowding for about 1 1/2 minutes until crisp and golden. Drain on paper towels and serve
