TWICE BAKED SHRIMP BAKED POTATOES
6 large potatoes
vegetable oil
2 cups sour cream
1 stick butter (8 Tablespoons), softened
1 cup shredded Monterey Jack cheese
1 cup shredded chedder cheese
1 lb cooked shrimp (I use the frozen shrimp cocktail and thaw them out first)
salt and pepper to taste
Coat 12 large potatoes with vegetable oil. Prick sides gently with fork.
Bake for 1 hour at 350 degrees.
Meanwhile, mix sour cream and butter together in a large bowl.
After the potatoes have baked for 1 hour, take them out and let them cool just a little bit.
Gently scoop out potatoes using a spoon. Place the potato insides in the bowl with the sour cream and butter. Beat for a little bit using a mixer. Fold in cheeses and shrimp. Add salt and pepper to taste.
Scoop back into the potato shells and bake for 20 minutes.
This is an excellent way to enjoy potatoes. I prepared a steak with it and made my own 'surf n turf.' Everyone loved it! :)
