Recipe(tried): Uncle Ben's Rice Pudding (from the box of the 70's)

I still have the recipe cut from the box. It is as follows:

UNCLE BEN'S RICE PUDDING

2 cups of cooked Uncle Ben's Converted rice (use left over or cook 1/2 cup as directed on package)
1 1/2 cups milk
7 tbsp. sugar (half a cup less one tbsp.)
2 eggs, well beaten
1 tsp. vanilla
1/3 cup raisins (or chopped dates, nuts, coconut or drained fruit)
Ground cinnamon or nutmeg (optional)

Combine cooked rice with the mixture of milk, sugar, eggs, vanilla and raisins. Pour into greased one quart casserole. If desired, sprinkle with cinnamon or nutmeg. Place in pan containing 1-inch of hot water.

Bake in 350 degree F oven for an hour or until a knife inserted comes out clean.

Makes 6 servings
