"Chef Marianne Hunnel at the '50's Prime Time Cafe dreamed up this crowd pleaser; it works as either a main or a side dish."
1 pound uncooked penne pasta
1/3 cup olive oil
1 cup small broccoli florets
1 cup sliced mushrooms
1 cup julienned yellow squash
1 shallot, minced
1/3 cup dry white wine
2 tomatoes, peeled, seeded and chopped
1/4 cup pesto
Salt and freshly ground black pepper to taste
1/2 cup grated Parmesan cheese (for serving)
Cook the pasta according to package directions; drain.
Meanwhile, over medium-high heat in a large skillet, heat the olive oil until hot but not smoking. Add the broccoli, mushrooms, squash and shallot and cook, stirring, until the vegetables are softened, about 6 minutes.
Add the white wine to the vegetables in the skillet and cook until the liquid is reduced by half.
Stir in the tomatoes, pesto and salt and pepper to taste. Cook, stirring, for 1 minute.
Add the pasta and cook, stirring, until heated through, about 2 minutes.
Transfer the pasta to individual plates and sprinkle with the Parmesan cheese. Serve immediately.
