Recipe: Unwrapped Caramels

Misc.

I made thes earlier today ...Good! Except I started out by melting 2 cups of semi - sweet (choco. chip cookie type) choc. chips. instead of milk choc. chips and now I don't know what to do with them! Here are the recipies and please remember ... MILK CHOC. CHIPS!!!
TWIX BARS (MASTERCOOK)

35 unwrapped caramels
1/4 cup water
1 box Lorna Doone cookies (40)
2 bags milk choc. chips (the recipie adds 12 ounces after this ingredient but it is unclear if they mean a total of 12 oz. or 24oz. I used 18oz and it worked quite well)
Combine the caramels with the water in a small pan and melt over low heat as you stir. Put the cookies on a cookie sheet that is ungreased.Spoon a dab of caramel on each cookie. Place these into the refrig. to firm up a bit. Meanwhile melt the choc. chips in a double boiler or in the microwave. In the microwave put them in for 1 min. on high. Stir then put in again for 1 min. Then drop a cookie into the bowl of melted choc. Caramel or peanut butter side up! Take a fork and cover the top side with choc. Life it out of the bowl on a fork. Tap the fork on the side of the bowl to remove the excess choc. Then set these on waxed paper to dry for several hours before you eat them ....(YEAH RIGHT!!!).....Or place them in the refrig for about 30 mins. to set. (We didn't try this way ....They didn't last that long!!!!!!!
PEANUT BUTTER VERSION (We liked these better ..but would also have no problem eating the caramel ones either!!!!)

Subsitute 1 cup of peanut butter sweetened with 1/2 cup of powdered sugar for the caramels. (Don't cook!!!) I mixed these ingredients in a bowl with a fork. Spread the peanut butter mix on the cookies with a knife. Then follow the dipping directions above.

I first melted one 12 oz. bag of chips to do 40 cookies. This covered about 3/4 of the cookies. I then took 3 of our 6 kids for a walk. When I got back in about 1 hour, I melted about 6 oz. more chips and covered the rest of the cookies. In that time the cookies had taken on a soft consistence ... the first ones not having "set out" were much better. I would suggest doing all of them at once!!!!
Enjoy! love,me
