UPSIDE-DOWN HAM CASSEROLE
3 tablespoons softened butter
3 tablespoons dark brown sugar
1 teaspoon prepared mustard
1 (8 1/2 oz.) can sliced pineapple, well drained
2 1/2 tbsp. flour
1/2 tsp. salt
1/8 tsp. ground black pepper
1 1/2 teaspoons minced onion
1 1/3 cups Minute Rice, uncooked
1 cup milk
1 cup water
4 ham slices, about 1/4 inch thick
Combine butter, sugar, and mustard 9x5x3-inch baking dish. Place in oven (400 degrees F) till butter melts. Blend; top with pineapple. Return to oven.
Meanwhile, mix remaining ingredients except ham in saucepan. Bring boil. Reduce heat. Cover; simmer 5 minutes. Stir occasionally.
Top pineapple mixture with ham slices. Spread with rice mixture.
Cover; bake l0 minutes. Cool 5 minutes, invert on serving dish.
