will be glad to provide you with several ideas on how to use the SOFRITO.
1. As an appetizer, mix a small package of mozzarella already shredded cheese with 1 sliced smoked sausage or chorizo & 2 tb. of Sofrito from the refrigerator. Mix well, put in MW container & microwave for 1-2 minutes or until the cheese is melted. Serve with Nachos as a dip or appetizer.
2. I a skillet with cover, mix 1/4 cup SOFRITO, 1/2 cup wine or chicken broth, 1 tsp PAPRIKA OR BIJOL & 1 tb olive oil. Saute the SoFrito with the Chicken breasts (sliced for frugality sake or half chicken breasts or whatever piece of chicken you prefer), cover & lower the heat. Add more liquid if necessary. You can also add carrot slices, golden corn or sliced mushrooms. Cover again & cook in LOW for about 20 minutes. Serve over white rice or mashed potatoes.
3. The best beef stew is using veal (or beef for stew) cut in cubes (masitas). Saut the veal in some olive oil or butter, add 1/4 cup of SOFRITO, 1/4 cup tomato juice, fresh sliced mushrooms (to taste), 2tb. pine nuts already golden, 1/2 cup broth or white wine & 3 potatoes, peeled & cubed. Cover the pot & cook in medium low for approximately 20 minutes or until the veal & potatoes are tender. Serve over pasta or rice.
You will definitely appreciate the freshness & the delightful aroma of this dishes.
You can even add SOFRITO to ground beef or PORK, a few vegetables ( mixed or corn or peas & carrots), 1/4 cup or to taste of Marsala wine & some Bijol or Paprika for color & you will have a marvelous stuffing for empanadas or a very simple but elegant sauce to serve over your pasta or rice.
Try at least some of these ideas & you will always have a batch of fresh Sofrito in your freezer (in individual portions) or refrigerator.
