If I may say, you might reduce the amount of Sofrito to 1/4 to 1/2 cup. It will keep for 2 or 3 weeks in the refrigerator & you can use it for multiple dishes. Also, you can pack it in individual portions of 1/4 or 1/2 cup in the freezer & used it whenever you need it.

Thanks again for the wonderful chicken recipe.
