Vidalia Onion Pie

2 1/3 cups chopped Vidalia onions
1 tbl butter or margarine -- melted
3/4 cup shredded cheddar cheese
Cheese crust
3 eggs -- slightly beaten
1 cup milk
1/2 tsp Italian seasoning
salt and pepper to taste

Cheese Crust
1 3/4 cups cheese cracker crumbs
1/4 cup + 2 tbl butter or margarine -- melted
Satue onions in butter till tender; remove from heat. Stir in cheese; spoon into prepared crust. Combine eggs, milk and seasonings. Pour over onion mixture. Bake at 375 for 25-30 min. or till set. Let set 10 min. before slicing. Garnish with onion rings if desired.
For crust: Combine crumbs and butter. Press onto bottom and up sides of a 9" pie plate. Bake at 350 for 5 min.

1015 Surprise Casserole

1/4 cup +2 tbl butter -- divided
3 medium Texas 1015 onions -- peeled and chopped
2 cups grated Swiss cheese -- divided
1 cup crushed saltine crackers -- divided
2 eggs
3/4 cup light cream (or half & half or canned
evaporated milk)
1 tsp salt
1/8 tsp fresh ground
Melt butter in a alrge skillet over med. heat; add onions and saute until tender. Place half the onions in a 1-1/2 qt. deep-diah pie pan. Sprinkle 1 cup Swiss cheese and 1/2 cup cracker crumbs over onions. Repeat layers. In a med. bowl, beat eggs, cream, salt and pepper. Pour evenly over onion mixture. Melt 2 tbl butter in skillet over med.-high heat; stir in remaining cracker crumbs. Lightly brown, then sprinkle crumbs over casserole. Bake at 350 for 25 min.

Sweet Onion-Asparagus Stir-Fry

3/4 lb fresh asparagus
2 medium sweet onions
1 tbl olive oil
1 clove garlic -- minced
1/4 cup oyster sauce
1/4 cup chopped pecans -- toasted
Hot cooked rice
Snap off the ends of the asparagus; remove scales from stalks, if desired. Cut diagonally int 2" pieces. Cut onion into 1/4" thick slices, and separate into rings. Heat oil in a large skillet or wok at med-high heat 2 min. Add asparagus, onion and galic, and stir-fry 4-5 min. or till tender. Remove from heat; pour in oyster sauce, and toss. Sprinkle with toasted pecans, and serve over rice.

Beefy Vidalia Onion Soup

1 lb top sirloin -- cut in 3/4" cubes
3 tbl flour -- divided
2 tbl veg. oil
1/2 cup butter or margarine
6 large Vidalia or sweet onions, thinly sliced -- separated into rings
6 (10-3/4oz) cans condensed beef broth -- undiluted
1/2 cup dry red wine
Baguette slices
1 cup shredded mild Swiss cheese
Dredge beef in 2 tbl. flour. Brown beef in hot oil in large Dutch oven, and remove from pan. Wipe pan clean. Melt butter in Dutch oven; add onion and saute until tender. Sprinkle with remaining 1 tbl. flour, and stir gently. Add beef, broth and red wine; bring to a boil. Reduce heat, and simmer 35 to 40 min. Ladle into ovenproof bowls; top each with a baguette slice, and sprinkle evenly with cheese. Place bowls on baking sheet. Broil 5" from heat (with electric oven door partially open) until cheese melts.

1015 Sweet Onion Dip

1/2 cup sugar
1 cup apple cider vinegar
2 cups water
1 lrg or 2 sml 1015 or Vidalia onions -- finely chopped
1/2 cup mayonnaise
1/2 tsp dill weed
In a med. bowl, mix together sugar, vinegar and water; set aside. Stir onion into the sugar mixture and marinate overnight. Before serving, drain well and stir in mayo and dill. Best served on Ritz crackers.

6 to 8 medium onions -- peeled
1/4 cup tomato juice
1 tsp salt
2 tbl butter or margarine
2 tbl honey
1/4 tsp paprika
Cut onions in half crosswise and place in buttered 1 qt. casserole. Melt butter over low heat; add remaining ingred. and stir until combined. Pour over onions. Cover and bake at 375 degrees for about 50 min. or until tender.
