Recipe: Vinegar Chicken (thighs)

VINEGAR CHICKEN
Yield: four dinner portions
Ingredients
8 each chicken thighs
10 each garlic cloves, peeled and finely chopped (about 3 tablespoons)
2 c. grated romano cheese
1 c. balsamic vinegar
Procedure
Trim excess skin from thighs, wash and dry with paper towel.
Place in a 13 x 9 x 2" oven proof baking dish.
Place an equal amount of garlic on top of each chicken thigh, then cover the thigh completely with cheese.
Preheat oven to 350 degrees. Place the chicken in the oven and bake for one hour.
Remove the chicken from the oven, and baste each thigh with an equal portion of balsamic vinegar. Return to the oven and
bake for an additional 15 minutes.
Serve the chicken on an appropriate platter along with any pan juices left after cooking.
