Recipe(tried): Dark Roast Beef Tenderloin with garlic mashed potatoes

DARK ROAST BEEF TENDERLOIN
WITH GARLIC MASHED POTATOES


1 1/2 lb beef tenderloin, fat removed
1/2 cup ground roasted good quality coffee
1 Tbsp. garlic
1 Tbsp. onion powder
1 Tbsp. oregano
1 Tbsp. thmye

Heat oven to 400 degrees F. Spray a deep glass pan with Pam olive oil nonstick cooking spray.

On a plate mix all seasonings with a spoon.

Rinse tenderloin then roll in seasonings and coat well. Place in prepared pan.

Roast, uncovered, 15 minutes for medium rare or until cooked as desired.

GARLIC MASHED POTATOES

4 red potatoes
diary cream
1 to 2 Tbsp. fresh minced garlic
salt and pepper pepper
softened butter

While that is cooking make mashed potatoes as usual but add 1 to 2 Tbsp of fresh minced garlic, salt and pepper, and mash with cream. Place prepared potatoes into a shallow glass pie dish. Coat a piece of wax paper with softened butter. Place wax paper with butter on top of potatoes and place in oven with tenderloin to keep warm.

Serves 4 with leftovers.. enjoy Marie
