MICROWAVE PEACH CHUTNEY
2 cups peaches, peeled and diced large
3/4 cup brown sugar
2/3 cup cider or white vinegar
1/2 cup raisins
2 teaspoons ground ginger
1/4 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon clove
Put the peaches, sugar, vinegar, raisins, ginger, cinnamon, allspice, and cloves into a 3-4 quart microwave-safe bowl.
Microwave, uncovered, on high for 10 minutes.
Stir and microwave for another 10-13 minutes, or until mixture has cooked down and slightly thickened. Taste and correct seasonings.
Ladle into a jar and store in the refrigerator.
