VITA MIX RECIPE - VANILLA ICE CREAM
Makes 4 servings
1 1/2 CUPS half and half or cream
2/3 cup sugar
1 tablespoon vanilla extract (or 6 to 7 heaping tablespoons powdered instant chocolate or 1-1/2 teaspoons imitation brandy flavoring)
4 cups FROZEN half and half cubes
Put ingredients in vita-mix container; clamp action down. Lever to HIGH; ON - If necessary use tamper to work ingredients into blades. Within 30 seconds, open spigot to test (or stop and uncover and test) the 'stiffness' of the ice cream. If it will stand up in cup like soft serve ice cream, it is frozen and should be dispensed immediately. If not quite that stiff (consistency of milk shake), quickly add 1 more cup FROZEN cubes. Wait 5 seconds .. and try again.
As I'm sure your book from VM explains - these are all for soft ice cream - if you want hard you have to the the tempering (which you usually do when making ice cream the regular way). If you dont have those directions either email vita mix - or let me know.
My book also lists VANILLA YOGURT ICE CREAM

3 cups ice cubes (18 to 21 cubes)
Directions would be the same.

We've mainly made our own flavors (and not lately) -- peach (using milk cubes tho I usually use 1% milk); butter pecan; oreo cookie, etc. No recipes .. just sort of add what we liked or had.
