Recipe: Waffle Cookies with Chocolate Frosting (using a waffle iron)

2 squares (1 ounce each) unsweetened chocolate, cut up
1/3 cup butter or margarine
3/4 cup sugar
2 eggs, beaten
1 teaspoon vanilla
1 cup all-purpose flour
Chocolate Frosting (recipe follows)
1/2 cup chopped pecans
Preheat waffle iron. In a medium saucepan, melt chocolate and butter over low heat. Cool slightly.
Stir in sugar, eggs, and vanilla. Add flour; stir just until combined.
Drop rounded teaspoonfuls of batter into center of each waffle grid. Bake on medium heat about 75 seconds. Using fork, transfer cookies to rack; cool. Repeat with remaining batter.
Frost, then sprinkle with nuts.
CHOCOLATE FROSTING
1 cup semisweet chocolate pieces
2 tablespoons light corn syrup
1 tablespoon cooking oil
In small saucepan, combine all the ingredients. Cook and stir over low heat just until smooth. Cool before using.
Makes 24 cookies
