Recipe: Warm Oriental Broccoli Salad for Abigail

Warm Oriental Broccoli Salad
Makes 6 servings.

1 cup hot tap water
1 large bunch broccoli
1/3 cup rice wine or cider vinegar
2 Tablespoons sugar
1 Tablespoon reduced sodium soy sauce
1 red bell pepper, seeded and cut into thin strips
1 Tablespoon sesame seeds

Remove broccoli from container. Cut into small florets. Steam the broccoli until crisp tender.
Combine vinegar, sugar and soy sauce; stir until sugar is dissolved. Add the steamed broccoli, pepper strips and sesame seeds and toss well. Serve warm.

Oriental Salad

6-8 servings

1 head napa cabbage, shredded
1 cup chopped celery
1 cup carrots
1 cup red peppers or yellow peppers
1 cup red onions
1 cup cauliflower
1 cup broccoli
1 cup zucchini
1 cup sugar snap pea
1 cup snow peas
1 cup toasteed cashews or almonds

Dressing:
1/2 cup vegetable oil
3 tablespoons rice vinegar
1 tablespoon honey
1 packet mr. noodles chicken stock

Wash all vegetables and pat dry. Shred the nappa lettuce and add to salad bowl. Add all other vegetables and nuts take the dry noodles from the soup package and crumble on top of the salad. Mix all the ingredients for the dressing and pour over the salad.
