Recipe(tried): Watermelon Preserves

Preserving - Jams, Jellies
Watermelon Preserves

Remove the green outer skin from the melon as well as the red fruit. Cut into small pieces.

4 quarts of melon rind
2 quarts of sugar
1 cup White Karo Syrup

Place all in a large pot and let stand for about an hour. Place on stove and heat to boiling. Boil, and stir occasionally till the syrup darkens and thickens. I usually put some in a saucer and allow to cool in the refrigerator. Stir, testing for thickness of the syrup. When you are satisfied with the thickness, ladel into sterilized glass jars. Cap and seal. I usually also place in a waterbath for 15 minutes to assure the seal and sanitized conditions.

This is much like fig preserves. The melon pieces are not crisp as pickles but soft like in fig preserves and great on biscuits or toast.
