Recipe: Wedding reception - Brunch

My wedding is August 29th this year. Do to a small budget we are having our wedding mid morning and having a brunch after. Here is our menu:
spinich and feta quiche,seafood quiche,zuchinni quiche and green chilli and cheese quiche.
smoked salmon and pasta salad
chicken and apple sausage (recipe is on this site)
shrimp and cocktail sauce
home smoked salmon with cream cheese, shaved onion,capers and chopped egg.
bagels and croissants
butter and assorted jams
(you could add muffins and/or sweet rolls)
fruit plate or fruit salad and marshmellow sauce
sliced heirloom tomatoes with fresh mozarella and basil.
salad greens
balsamic and olive oil dressing, ranch dressing and blue cheese dressing.
coffee tea orange juice and sparkling cider
wedding cake will be a flat cake from costco
we are having both a white cake and a chocolate cake. Their cakes taste good, serve aprox 48 people each and cost aprox $15.00 per cake.
The quiches will be made ahead and frozen, then just reheated during the ceremony. Pasta salad will be made a few days ahead.
salmon will be smoked and frozen-thawed for wedding.
sausage will be made ahead and frozen or purchased and rewarmed.
shrimp will be purchased cooked and peeled
breads will be purchased at costco or sams
fruit salad will be made or purchased a day or two ahead
tomatoes and mozzarella will be sliced ahead of time.
Another idea is to have a potluck reception where everyone brings a dish to share. You would provide beverages and cake or maybe someone will make the cake.
You could have a Tea with little canapes and finger sandwiches that could be made ahead of time and frozen and a fruit salad. coffee, tea ,punch, and cake
You could have a luncheon buffet with
sliced meats and cheeses and a few sandwich fillings like ham or chicken salad and sandwich fixings and assorted breads and rolls
with some salads like-potatoe, macaroni,bean
sodas coffee and tea.
Wedding cake.
If our wedding had been closer to noon i would have done a curried turkey salad (I will post recipe if you are interested) that would have been made a few days ahead. Served on a bed of field greens garnished with toasted almonds and a fresh strawberry. Croissants and butter. Beverages and Wedding Cake. You do need someone to plate and serve this one.

Please do not spend any more money than you have budgeted. There is no reason to go into debt.That is no way to start your new life with your mate.
There is nothing wrong with having Wedding cake and punch for your reception.
Your friends and family co-workers and neighbors would love to help you with this ask them. You might be surprized with what they can come up with. But you are the boss, delegate delegate delegate!
